While visiting my son and his wife we brought back some fresh produce from a wonderful farmers’ market.  Using some of the produce as well as herbs and peppers from their container garden they made four different kinds of pizza.

The dough recipe:

4 1/2 cups of flour

1 3/4 tsp. salt

1 tsp. yeast

1/4 cup olive oil

1 3/4 cups cold water

My son mixed this up and divided it into four parts, putting each in a covered container overnight.  He said it’s easier to work with that way.

After kneading each one he stretched each over his knuckles.

He rolled the dough and pinched up the edges.

He put the crust on a pizza peel and started building the fillings.  They both worked together to add toppings.  The beet had shredded cheese, then sliced fresh mozzarella.  Next they peeled and shaved  raw beets very thin.

They heated a pizza stone at 500 degrees for 10 minutes.  The pizza was cooked until the crust was done and the cheese bubbly.

After taking it out of the oven, they sprinkled it with shredded basil.  Yum!
