Houses for Sale in the Mountains

My house is for sale with a lower price of $179,900. The house across the street that often appears in my view pictures is also for sale. It belonged to a dear friend who passes away this summer.
The gardens and landscaping are well documented on this blog. Here are a few pictures of my house.
There [...]

Autumn 2011

The North Carolina mountains always excel in beauty, no matter the season. Most visitors come in the fall to see the spectacular colors. I can never resist posting the changes around my house.

There’s a saying in this tar heel state that if God isn’t a Carolina fan why did he make the sky Carolina blue?

When [...]

Fennel Thinnings

For some reason when planting fennel the seedlings crowd each other out. So there’s often many to thin. Here is one way I use the extras.

Mushrooms and Fennel
After cleaning the fennel I use only the base of the leaves. The tops can be saved as garnish for salads.

After sauteing the mushrooms in a mixture of [...]

Shallots Update

While shopping at Walmart with friends, one of them alerted me to a display that had different varieties of shallots prepackaged. I picked two varieties and planted them the next day. Out of eighteen, thirteen are growing, some better than others. This time I followed directions and planted them two inches below the ground. Now [...]

Shallots

Last spring I planted shallots here and in Virginia, where I hope to move if I ever sell this house.

Since it was the first time, I just stuck them in the ground like they were onion sets.

They grew and multiplied in both places. My son and his friends used all the shallots in Virginia. After [...]

Fried Sage

My first experience with fried sage was the final touch on Chicken Saltimbocca. That began my love affair with the herb and the process. Then I noticed that I wasn’t the only one. It seems to be the new fad in many recipes.
The first sage I tried to grow was a pretty variegated variety. It [...]

Too Much Snow

From December to the ten-day forecast snow was and is a possibility. The plowed piles of dirty snow on the sides of the road have never disappeared except when fresh snow made them white again.

It is scenic, especially the last snow that coated almost every twig.

My favorite snow-covered tree is the blue spruce below.

It collects [...]

Okra Soup

My favorite way to fix okra is sauteing some shallots, adding the okra, cooking until it is barely tender. Next I put in chopped, fresh tomatoes and cook until they are just heated. After a summer of enjoying this recipe, I was ready for something different. After researching okra soup on the internet I decided [...]
