Search for butternut soup recipes and you will be cooking for days if you tried just the ones that sounded delicious. This recipe is from America’s Test Kitchens. I found a similar version in their cookbook, which is a great resource . Below are the ingredients for the one in their cookbook. I prefer the less sweet version without the cinnamon croutons. Adding thyme and chicken stock to the steaming base added the flavors I thought enriched the stock without overwhelming the butternut squash.
I used a combination of Waltham and Butterbush squash.

This soup has a simply delicious taste and texture. I thought last year I was growing plenty of Butternut squash, but with all the soup trials, they went quickly. This is my favorite, but the Spicy Butternut Squash Soup is a very close second.
