Search for butternut soup recipes and you will be cooking for days if you tried just the ones that sounded delicious.  This recipe is from America’s Test Kitchens.  It can be found at Americas Test Kitchens. It is a video which is a great way to cook if you can write down the recipe as you go.  I found a similar version in their cookbook, which is a great resource .  Below are the ingredients for the one in their cookbook.  I prefer the less sweet version without the cinnamon croutons.   Adding thyme and chicken stock to the steaming base added the flavors I thought enriched the stock without overwhelming the butternut squash.


I used a combination of Waltham and Butterbush squash.


Above are the rest of the ingredients, except for the chicken stock and cream.

This soup has a simply delicious taste and texture.  I thought last year I was growing plenty of Butternut squash, but with all the soup trials, they went quickly.  This is my favorite, but the Spicy Butternut Squash Soup is a very close second.
