Health magazine had several recipes for flatbread pizzas.  I picked the one with artichoke hearts and cherry tomatoes.  It was easy and delicious!

Since then I’ve experiment with many variations, all tasty but some better than others.  The one below included zucchini, peppers, onions and parsley from the garden.

Adding mushrooms made it even better.   It is hard to beat fresh tomatoes and basil from the garden.

For one I used left-over stewed okra and tomatoes.  Whatever I’ve had from the garden, and used has been an appetizing meal.  The possibilities seem endless!

  1. wow – those look really great. I’ve wanted to find a recipe for healthy (or at least healthier) pizzas for awhile – and now I have some! Thanks
