When I’ve worked outside most of the day often I want something quick and easy, but healthy for supper. Most people know about roasted vegetables and have probably experimented like I have.

These are dishes I fix in the microwave. First I zap the onions for a minute or two. Then I put in the potatoes mixed with a little olive oil. When they are almost tender I added the spinach from the garden, and some grape tomatoes.

The one above has added carrots, asparagus and parsley. Sometimes I add pepperoni, or any other leftover meat that is available. These also make a quick and colorful side dish for a meal with guest.

This JalapeƱo Corn Chowder can use corn from the garden, or frozen. It’s another delicious use for cilantro besides salsa. When I made it I didn’t have some of the ingredients. Instead of Feta cheese I used cheddar, and didn’t have any roasted red pepper. I also used a hand blender for all the corn and chicken stock. It was delicious and took very little time to fix.

Tried the soup but substituted shrimp for chicken..excellent! Looking forward to more of the same.

The jalapeno corn chowder looks delicious. I’ll have to give that a try. Cool blog.
