I picked seven cucumbers yesterday, and will pick more today. If anyone knows a good way to freeze them, let me know. My family always loved cucumbers washed, scored with a fork, sliced, then sprinkled with vinegar. This recipe for cucumber dip is another favorite way to fix them:

Cucumber Dip

I made a new recipe that was delicious, but didn’t satisfy my hunger for very long.

Chilled Cucumber Soup

These are the ingredients I used. I didn’t seed the cucumbers, and only peeled about half the peel off. I also added more lemon zest and juice after tasting.

It’s ready to blend, with the rest waiting to be added after the blending.

This would make a refreshing first course for a summer dinner party.
