When I’ve worked outside most of the day often I want something quick and easy, but healthy for supper. Most people know about roasted vegetables and have probably experimented like I have.

These are dishes I fix in the microwave. First I zap the onions for a minute or two. Then I put in the potatoes mixed with a little olive oil. When they are almost tender I added the spinach from the garden, and some grape tomatoes.

The one above has added carrots, asparagus and parsley. Sometimes I add pepperoni, or any other leftover meat that is available. These also make a quick and colorful side dish for a meal with guest.

This Jalapeno Corn Chowder can use corn from the garden, or frozen. It’s another delicious use for cilantro besides salsa. When I made it I didn’t have some of the ingredients. Instead of Feta cheese I used cheddar, and didn’t have any roasted red pepper. I also used a hand blender for all the corn and chicken stock. It was delicious and took very little time to fix.
